Ready for a 12 hour smoke on that brisket? If you're cooking with 2 drums at one time for enhanced flavor, you would want to have 6 drums. Two will cook for 4 hours, then you take them off and add the next two drums. After 4 hours, you add the last 2 drums to complete the 12 hours.
